Broccoli Salad

Quick and easy side dish for dinner, or make in bulk for easy go-to lunches.

Ingredients

1 large head or 2 small heads of broccoli

1 carrot

1 red apple

½ red onion, sliced

Juice of 1/2 lemon

4 tbsp mayo

Method

1. Pop broccoli in a food processor and pulse blend until desired size. Put aside in a bowl.

2. Add carrot, apple & red onion to food processor and repeat the above step with these ingredients.

3. Add mayo & lemon juice to bowl and mix until well combined.

4. Serve and enjoy!!!

Storage

Store in an airtight container for up to 1 week.

Tips

Add crushed almond nuts & cranberries to add a bit more flavour.

Quick salad as a side for dinner or add some protein for lunch option.
