Slow Cooker Corned Silverside

This is an absolute winner in our house. Super quick & easy to pop on in the mornings, creating a beautiful aroma to come home to at the end of a busy day, knowing you only need to whip up veggies or salad VS hours in the kitchen. Great high protein snack or lunch idea too.


Prep:   8mins               Cooking: 7-9hrs Slow or 4-6hrs High                Serving: 8 servings

 

Ingredients

1.5kg Silverside

1 Onion

1 Carrot

10 Peppercorns

6 Cloves

2 Bay Leaves (optional)

¼ cup brown sugar

½ cup malt vinegar

Enough water to cover

 

Method

1.        Rinse meat under water to remove any salt brine

2.       Place meat in slow cooker

3.       Slice carrot & add to slow cooker

4.       Roughly chop onion & add to slow cooker

5.       Add remaining ingredients into slow cooker

6.      Add enough water to just cover the meat

7.       Give mixture a little bit of a stir & pop lid onto slow cooker

8.      Cook on HIGH 4-6hrs or on LOW 7-9hrs

9.      Serve with veggies or salad.  Alternatively you can store in fridge and use for sandwiches/lunches.

 

Storage

Store in an airtight container for up to 1 week.
